Mashed Potatoes Bodybuilding Recipe

Roasted Red Pepper Mashed Potatoes Side Dish

4 large Russet potatoes
2 Red Bell Peppers
¾ cup chicken broth
¾ cup cottage cheese 2%
1 teaspoon salt
1 teaspoon black pepper

Peel and chop potatoes into chunks, and boil for 20 minutes. Meanwhile cut peppers into long slivers, and broil them until black (about 10 minutes.) In a plastic bag, add ¼ cup of water, and put charred peppers in to steam for 5 minutes.

Put potatoes in a large bowl. Add broth and cottage cheese. Beat with a mixer until smooth.

Peel the black skin off the peppers, toss them in the potato mixture, and beat 10 seconds with the mixer. Potatoes will be slightly pink with red chunks of pepper. Stir in salt and pepper.

Serves 6
